Chemex Brew with El Salvador Oculto

Ingredients
- 40 grams of El Salvador Oculto coffee beans (medium-coarse grind)
- 700 ml (23.7 oz) of filtered water (heated to 200°F / 93°C)
- Chemex paper filter
- Scale, timer, and grinder
Instructions
1. Prepare the Chemex
Open the Chemex paper filter, place it in the Chemex, and rinse thoroughly with hot water to remove any papery taste. Discard the water.
2. Grind the Coffe
Grind 40 grams of El Salvador Oculto beans to a medium-coarse consistency, similar to sea salt.
3. Bloom
Add the ground coffee to the Chemex filter. Start your timer and pour 80 ml (2.7 oz) of hot water evenly over the grounds. Let it bloom for 30 seconds, allowing the coffee to degas.
4. Brew
Continue pouring water in small, circular motions, pausing occasionally to let the coffee bed settle. Pour until you reach 700 ml. This process should take about 3:30 to 4 minutes.
5. Serve and Enjoy
Remove the filter, discard the grounds, and swirl the Chemex to mix the coffee. Pour into your favorite mug and savor the flavors of El Salvador Oculto.
